Zawartość metali ciężkich oraz azotanów i azotynów w wybranych warzywach rejonu Lubelszczyzny
[The heavy metals, nitrates and nitrites content in the selected vegetables from Lublin area]

STRESZCZENIE
Oznaczono zawartość metali ciężkich (ołów, kadm) oraz azotanów i azotynów w wybranych warzywach (sałata, rzodkiewka, szpinak, szczypior, szczaw) pochodzących z terenów ogródków działkowych: w centrum Lublina i poza miastem oraz z targowiska i supermarketu. W badanych warzywach nie zostały przekroczone dopuszczalne normy zawartości ołowiu i kadmu. Większość warzyw pozyskanych z targowiska charakteryzowała się wyższym poziomem badanych metali ciężkich niż warzywa z obszarów potencjalnie nie zanieczyszczonych (ogródki działkowe poza Lublinem, supermarket). Przekroczenie dozwolonych limitów dla azotanów wystąpiło jedynie w rzodkiewce oraz szczypiorze pochodzących z terenów działkowych w centrum Lublina oraz w szczypiorze z supermarketu. Średnie zawartości azotynów w badanych warzywach były niewielkie i nie stanowiły zagrożenia dla organizmu człowieka.

ABSTRACT
The contents of heavy metals (lead and cadmium) and nitrates and nitrites have been analyzed in the selected vegetables (lettuce, radish, spinach, chives, sorrel) obtained from the following allotments; the Lublin centre, the city surrounding and also from the marketplace and the supermarket. The tested vegetables did not exceed the acceptable lead and cadmium content norm. Most vegetables from the marketplace had a higher content of the analyzed heavy metals than the vegetables from the unpolluted areas (the allotments Lublin surrounding, the supermarket). The acceptable norm for nitrates was exceeded only in the radish and the chives, which came from the allotments in the Lublin centre and also in the supermarket chives. The mean nitrites content in the test vegetables were not significant and were not harmful to people’s health.
